4 Recipes for Mug-Made Microwave Meals

MINJI SON For those of us who live in dorms, cooking food is seen as a hassle. Not only is the kitchen on a different floor, but you also have to share it with others. But fear not, for I have some recipes that are perfect for dorm dwellers! A lot of these ingredients can be found at Jester City Market, Kins Market, or the Fresh Plus grocery store down on 24th Street. These recipes are quick and easy, and all you need is a fork, a mug, and a microwave!


Quiche In A Cup  

You’ll need:  

1 Tablespoon of Melted Butter One Large Egg 1 ½ Tablespoons of Milk A Pinch of Salt and Pepper Tomatoes Cheese Any Green Vegetable (chives, spinach, etc.) Bread

First add the butter, egg, milk, and seasoning into your mug and mix. Then add in the vegetables and a generous amount of cheese and mix again. Rip up a slice of bread and push it a little into the mixture to soak the bread base. Microwave for 2 ½ to 3 minutes. Scrape down the sides and flip onto a plate, or just eat out of the mug.


Steamed Eggs

You’ll need:

1 Large Egg A Couple Pinches of Salt Water Vegetables like carrots or onions (optional)

First beat the egg and then add enough water to make the egg to water ratio 3:2. Add vegetables of your choice and seasoning and mix. Cover mug with damp paper towel and microwave for 2 ½ to 3 minutes or until the egg is cooked all the way through.


Peanut Butter Mug Cookie

Peanut Butter Cookie

You’ll need:

1 Tablespoon (½ oz/15g) room temperature Butter 1 Tablespoon Brown Sugar 1 Tablespoon White Sugar 1 Egg Yolk 1 Tablespoon Peanut Butter 2 ½ Tablespoons of All-Purpose Flour

First mix the melted butter and sugar together. Then add the egg yolk and peanut butter and mix. Stir in the flour one tablespoon at a time and then mix until all ingredients are completely combined. Scrape down the sides and pat down the mixture before microwaving for 40-60 seconds. In a microwavable mug, mix the butter and sugars together. Try not to overcook the cookie because they can dry out.

Gluten-Free Chocolate Banana Mug Cake (Makes 2 servings)

You’ll need:

1 Ripe Banana ¼ Cup (4 tbsp) Peanut Butter (or any nut butter) 1 Large Egg 2 Teaspoons Granulated Sugar  3 Tablespoons Unsweetened Cocoa Powder

First mash the banana in your mug and then add the peanut butter (I used cookie ) and egg and mix thoroughly. Add the dry ingredients and beat until the mixture is smooth. Divide the batter between two mugs so that it’ll cook faster. Microwave separately for 1 minute each until the mug cake is firm. Try not to overcook it or the cake will dry out.
